while we wait

I’ve been channeling my energy into nesting. Crafty projects (you’ve seen a few). Cooking big meals. I generally cook big meals with leftovers, but have consciously been doing this more & freezing big batches.

A few of my favorite things to prep ahead & freeze:

*soups, especially black bean or chicken and wild rice


*pasta–with lots of veggies

*lasagne (I mean what kid doesn’t like pasta?)

*pud thai

*mini quiches–bake, freeze, microwave & go. We love these as a good way to get protein in the morning.

*put chicken, vegetables, potatoes, and marinade in a ziploc. Freeze. Put in baking dish when ready.

*side dishes like mashed sweet potatoes, cut up veggies with balsamic ready for oven roasting

*chili!–black bean & sweet potato, white bean chicken chili, traditional chili… we could eat it once a week at our house

    I have a great vegan cookbook (Vegan Planet) with some recipes that would satisfy even the non-veg/vegan person. One is a great chili, also corn chowder, lots of things with sweet potatoes and black beans.
